If you use sweet, ripe, and meaty tomatoes, it tastesalmost like dessert. Topped with three kinds of grated cheese for a decadent treat. You canalso add your choice of fresh herbs for an aromatic baked goodie that can fill the home withpleasure and bring giddying delight to dinner guests. Serve with a bottle of Pinot Noir orMerlot for an unforgettable meal.A simple way to make tomato pie is to use premade piecrust, which can be bought frozen ingroceriesBefore using, thaw the piecrust and then using a rolling pin, flatten it out and fit itin a round pie pan sprayed with nonstick spray or coated with oil. You can also line it with abaking paper so that the pie does not stick to the bottom of the pan. Pierce the bottom ofthe crust with a fork and bake it in a preheated 350 degree F oven for about 12 to 14minutes or just until the edges start to brown.Chop the tomatoes into wedges or rounds and place in a colander. Squeeze out as muchjuice as possible so that the pie does not turn out soggy. Sprinkle chopped onions at thebottom of the piecrust and top with tomatoes and chopped basil. Season the tomatoes withsalt and pepper. Sprinkle the whole with your choice of grated cheese. Mozzarella,Parmesan, and cheddar make an excellent combination for a sumptuous tomato pie.
