Some of the best tomatoesfor use in salads are cherry or grape varieties of tomatoes since they are small and can beadded whole, without the need to slice them. Simply wash them and take off their stemsand add into the salad. A simple tomato salad is tomatoes garnished with herbs like chives,mint, and basil, and sprinkled with some crumbled cheese like mozzarella, goat’s cheese, orblue cheese, and dressed with oil and vinegar dressing. This kind of salad also makes arefreshing side dish to grilled fish or seafood or fried meats.A salad popular in the Mediterranean is cucumber and tomato salad. Tomatoes andcucumbers are simply chopped up into large cubes and seasoned with herbs and dressedwith vinaigrette. Walnuts, pine nuts, and cheese can also be garnished on top of it for moreflavor and texture. Feta cheese is especially delicious with this type of salad.Larger and meatier tomatoes are often sliced into large or thin rounds to make chef’s salador summer salads.
