Away from work, George Manos likes to cook international cuisine from countries such as Vietnam. Consisting of fresh ingredients, Vietnamese fare is known for its simplicity. Popular dishes, like pho and banh xeo, can be prepared roadside. Banh xeo is a stuffed rice-flour crepe containing pork and shrimp. The dish, traditionally served with bean sprouts, scallions, cilantro, and lettuce, can be rolled up in rice paper for easy transport.

Comprised of rice noodles and a variety of fresh herbs, pho is a broth-based soup that is can be made with slices of chicken or beef. The soup base features star anise and cinnamon as well as beef leg and knuckle bones. The latter contain gelatin that enrich the broth. When ready, pho can be seasoned with Sriracha or hoisin sauce. Lime juice also complements the dish.
